Ingredients:

  • 1 ripe banana (mashed)
  • 1 cup rolled oats (blended into oat flour for a smoother texture)
  • 1/2 cup almond milk (or any plant-based milk)
  • 1 tbsp chia seeds (mixed with 3 tbsp water, let sit for 5 minutes)
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Coconut oil or vegan butter for cooking

 

Instructions:

  1. Mix the mashed banana and chia seed mixture in a bowl (this replaces the egg).
  2. Add almond milk and vanilla extract to the banana mixture.
  3. In a separate bowl, combine the oat flour, baking powder, cinnamon, and salt.
  4. Pour the dry ingredients into the wet ingredients and stir until just combined. If the batter is too thick, adjust with a little more almond milk.
  5. Heat a non-stick pan over medium heat and lightly grease with coconut oil or vegan butter.
