Flipping Good Choices: Healthy Pancake Recipes for Pancake Day

Hello pancake enthusiasts! Pancake Day is just around the corner, and we’ve got three delicious and nutritious pancake recipes to make your celebrations both nutritious and utterly scrumptious. Let’s dive right in!

  1. Banana-Oat Power Pancakes:

 

Ingredients:

  • 2 ripe bananas (about 200g)
  • 100g rolled oats
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • A pinch of salt
  • 1 teaspoon vanilla extract
  • 100ml milk of your choice

 

Instructions:

Blend bananas, oats, eggs, baking powder, cinnamon, salt, vanilla extract, and milk until smooth.

Heat a non-stick pan over medium heat and pour batter to form pancakes.

Flip when bubbles appear on the surface. Cook until both sides are golden brown. Serve them with any berries and Greek yogurt and a drizzle of honey. You can add some walnuts or any other nuts of your choice for that extra crunch.

 

2. Spinach and Feta Protein Pancakes:

 

Ingredients:

  • 100g fresh spinach, finely chopped
  • 150g whole wheat flour
  • 2 eggs
  • 1 teaspoon baking powder
  • 150ml milk of your choice
  • 50g feta cheese, crumbled
  • Salt and pepper to taste

 

Instructions:

In a bowl, mix spinach, whole wheat flour, eggs, baking powder, and milk.

Gently fold in crumbled feta. Season with salt and pepper.

Cook spoonful’s of batter on a heated, greased pan until bubbles form. Flip and cook until both sides are cooked through.

3. Blueberry Bliss Buckwheat Pancakes:

Ingredients:

  • 150g buckwheat flour
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon baking powder
  • 2 eggs
  • 200ml almond milk
  • 100g fresh blueberries
  • Coconut oil for cooking

 

Instructions:

Combine buckwheat flour, honey or maple syrup, baking powder, eggs, and almond milk in a bowl.

Gently fold in fresh blueberries.

Cook pancakes in coconut oil over medium heat until golden brown on both sides. Add some blueberries on the top with a bit of nut butter of your choice.

Tips for a Perfect Stack:

  • Use a non-stick pan or lightly grease your pan with coconut oil.
  • Pour the batter onto the pan when it’s hot but not smoking.
  • Wait for bubbles to appear on the surface before flipping.

 

Experiment with toppings like Greek yogurt, sliced fruits, or a drizzle of nut butter for added flair.
